Anzac Biscuits


Just a tad late for these, but I guess we can honour the Anzac's any day of the year! They certainly deserve it.
You need 1 Cup Plain Flour, 2/3 Cup Sugar, 1 Cup Rolled Oats, 1 Cup Coconut, 125g Butter, 2 tbspns Golden Syrup or Honey, Half tspn Bicarb Soda, 1 tbspn Boiling Water.
You sift flour into large mixing bowl and add sugar. Add oats and coconut, make a well in centre.
Combine butter & syrup in small pan. Stir over low heat until butter has melted & mixture is smooth. Remove from heat. Dissolve soda in water, add immediately to butter/syrup mix. It will foam up instantly. Add butter mix to dry ingredients. Stir well with wooden spoon.
Roll into even sized balls and place on greased baking sheet. Flatten with fork and sprinkle with sugar. Bake 20 mins until just brown, 180 degrees c. Cool on wire tray.
