Chocolate Caramel Slice


Not something I make too often - but when I do, it disappears pretty quick!
Bec actually put most of these together. We took them camping with us.
Its made in three parts, but don't let that put you off, it still only took about half an hour while oven was already on for dinner.
Base: 1 cup self-raising flour, 1 cup sugar, 1 cup coconut, 125g melted butter.
Combine all ingredients. Mix well. Press into greased lamington pan. Bake at 180 degrees c. for 10 minutes.
Filling: 400g can of sweetened condensed milk, 1 tbspn butter, 2 tbsn golden syrup.
Combine all ingredients in a small saucepan. Stir over moderate heat until boiling. Stir constantly for 5 minutes - don't stop stirring or it will burn and stick to pan. Spread over base. Return to oven for 10 minutes. Remove & cool.
Topping: 150g cooking chocolate, 20g copha/butter. Melt together in double boiler or in microwave - break into small pieces and place in glass bowl. Stir every 30 secs with metal spoon only until smooth. Spread over caramel filling. Refridgerate until set. Turn out and cut into squares.
